S. Sullivan:
RC parishes in Co. Cork are split between three dioceses and depending on which diocese, the records may be on a free site or a subscription site.
Diocese of Cork and Ross-Records are available on the free site www.irishgenealogy.ie This diocese covers most of the south and west of the county except for about six parishes in the far southwest which are part of the Diocese of Kerry. Fortunately, records for these parishes are also on the free site www.irishgenealogy.ie but you have to access using Co. Kerry to get these records.
The third diocese is the Diocese of Cloyne which covers parishes in the north and east of Co. Cork. Records for these parishes are on subscription sites such as Roots Ireland.
Now the hard part which is your family surname. Sullivan is extremely common in Co. Cork and unless you know the parents names of the people you are searching including the mother's maiden name, it will be impossible to find records.
Let me know what questions you have and we can try to further assist.

The Father's name was Michael & Mother's name was Honora, don't have her maiden name or marriage info.
According to the 1851 census for England here is what I have.
Honora age 52 born about 1799
Stephen age 24 born about 1827
Jeremiah age 20 born Kerry about 1831
John age 19 born about 1832
Denis age 16 born about 1835
George age 14 born 1837 in Monaghan this is my Husbands great grandfather
When George got married in 1872 he listed his father as Michael & he was deceased
