My ancestor Hugh Bourke was a convict transported to Australia in 1838. On his death certificate in 1865 in NSW Australia, his parents are listed as Mr ??? Bourke, play actor and Matilda Cox. Although Hugh Bourke is from Limerick, DNA is leading to many Galway connections. Any idea where I could find information on a play actor? Thanks.

No, unfortunately I don't. Hugh Bourke was born 1822 at St Johns Gate, Limerick City , so I presume his parents would have been born 1790-1802.
I have checked any and all online possibilities, including RootsIreland and NAI, but no luck.
