Can you provide more information regarding when this couple married? Did they have children in Ireland? Did they emigrate?

There are plenty of McCarthys having kids in Bansha (but no Thomas) in the 1840s.
However there are two Thomas McCarthy in Kilfeacle which contains Springhouse bapt 11May 1845 (S of Flo? Mccarthy and Cath Madden) and the other bapt Nov 1846 (S of Pt (Patrick?) Mccarthy and Brigt Ryan).
