you appear to have found a lot already, I too could not find the marriage, there was a Thomas Plunkett married in NObber but to an Ann Dolan, I searched the Irish Genealogy website for the births of Plunketts between 1864, the start year of Irish Civil records and found 20 entries but no mother given on the site so cannot identify if any might be children, maybe you could if you have the Christian names, I did however find a death of a Mary Plunkett age 42 in 1875  and another in 1891 aged 55, the only two that suit, there is also a Thomas Plunkett died in 1895 aged 65. The site is http://www.irishgenealogy.ie/en/ , the church records for most of the country are not on the site as yet. If you know the names and ages of the children you can check the census for 1901 and 1911, default is 1911 here  http://www.census.nationalarchives.ie/search/  In case you are unaware St Marys Meath is in Drogehda, Co. Louth in the main, Drogehda is divided by the river Boyne and the south side is politically in Louth but church wise in Meath.

The local phone book list 8 Plunketts (by the way I noticed on Ancestry I got a lot of hits under the spelling Plunket also just in case it helps). http://www.eirphonebook.ie/ It defaults to business. 

There are 2 local papers if you wished to try writing, http://www.independent.ie/regionals/droghedaindependent/ and a free newspaper http://droghedaleader.ie/ 

While the name Plunkett has a lot of historical significance in the area including the Saint of that name McEvoy is now, I think, more common. 

Copies of certs post 1864 can be obtained and a photocopy of the entry costs €4 about $5 or less but you have to write and enclose the payment, you can download the form online and post it in and they will return by email, there is a turnaround time of 3 to 5 days after receipt. Just to say that the mothers name not been given on the site may not be correct as I have received the certificate and the name is on it while the site says N/R so do not be disheartened until you see the certificate.
