This ancestor is a stubborn one; I know very little except that he was born ca. 1815 in Swinford, County Mayo. He married Catherine Caulfield 8 Feb. 1834 according to Ireland, Selections of Catholic Parish Marriages and Banns, 1742-1884.
His son, Martin Edward, was born ca. 1835 in Ballycullane, Tintern, I'm pretty certain that this is correct because Martin's two brothers and one sister were also born in Ballycullane in the next following years.
Martin Edward emigrated to Canada ca 1853; I have him on a Canadian census in 1861.
If I could find anything on Simon (date of death, place, etc) and Martin's exact date of departure to Canada, I would be so grateful.
I would also be thrilled to find Simon's wife, Catherine Caulfield's date & place of death.

In the Tithe Applotment Books for Wexford, there were three heads of household named Simon Roche/Roach:

Roach Simon Ballyvaroge Fethard Wexford 1828

I agree with Patricia that Simon was probably not from Mayo as his marriage record that you have posted on your Ancestry tree shows the place of residence as Ballinanane (AKA Ballyanne) which is a town land in the RC parish of Ballycullane. If he was from county Mayo, it would have that in the information. The Griffith's Valuation for Ballyanne shows three men with the surname Roche...none are Simon. That doesn't mean that he did not live there though. Martin's baptismal record shows the family lived in Ballyanne as well. Thomas' and John' s baptism records show the family was living in Ballinruane....and, as Patricia indicated above, Thomas and Martin Caulfield lived in that same town land. Unsure of their relation to Catherine though.
The civil death records began in 1871, so you can search irishgenealogy.ie for their death records. The correct registration district to put in the box is Enniscorthy. There are a number of possibilities for Catherine (Caulfield) Roche, but it might be difficult to figure out which one is hers because her three living children emigrated, thus were not present at death. Are you certain that her son died as a child? I ask because I saw a few entries of a son John present at death.
