After our great, great grandfather's mother passed away (John Dempsey), he was raised by Mary Minchane in Courtmacsherry. I am finding it difficult however to see how this lady connects to the family.
I found her on census records and managed to find a marriage certificate to a Denis McGuire in Clonakility but absolutely no other details on her.
The surname seems unusual, however I am hitting a wall on any other details on her.

Based on the previous info Patricia shared (Below) wasn't Mary Minchane John's Aunt, his father's sister?
The 1911 Irish census shows Daniel living in Courtmacsherry with his sister Margaret and two children, Lizzie and John Dempsey.

The 1901 census shows Daniel’s sister Margaret living with another sister, the widowed Mary Minchane, and a niece, Eliza Dempsey.

Based on the 1901 census I found a 1893 birth record on Irishgenealogy for a John Dempsey, parents Daniel Dempsey and Mary Brien in Conakilty, Cork. Father was listed as a fisherman but I have also seen him identified as a carpenter on other siblings birth records. His mother Mary died that year at the age of 38 due to hemorrhaging.

Another thought. Perhaps you are looking for someone with the last name Minihane. That name shows up in Irishgenealogy (free website) records. Also wouldn't Mary's last name be Dempsey when she married?

Looking at John's birth record and his mother's death record, she died a few hours after his birth.

Thank you for your help, yeah I managed to find records on the mum's death, however on census records, it looks like Eliza (John's sister) were living with Mary Dempsey and Mary Minchane.
I have no idea how Mary Minchane relates to them. I can't find any records of her being a Dempsey and marrying a Minchane.

I think that the spelling of her surname is Minihane (also see Minahane in this area of Cork). It looks to me like the original 1901 census record is an "undotted letter i" and not letter C. On irishgenealogy.ie under the church records tab, there is a marriage record for Joannem MInihane & Mariam Dempsy in 1860 in the RC parish of Timoleague and Barryroe...this also encompasses the parochial area of Lislee - that is where the townlands of Cullenagh & Courtmacsherry are adjacent to eachother. Granted, she would have been very young at marriage in 1860; however, her age of 55 years in the 1901 census might be incorrect as well. I think that Margaret (never married) and Mary Minihane are sisters. The birth records for the RC parish of Timoleague began in 1842, so you might be able to find the siblings records on irishgenealogy.ie.

If you think the marriage I mentioned is your relation, I also found birth records for their children....maybe. You'll need to first look on the church records tab for the pre 1864 records, and then on the civil records tab for the post 1864 ones. The residences listed look like some version of Courtmacsherry on the early records, then in the civil ones, some records show Courtmacsherry and others Cullenagh. Also, some records show John's name as Jack.

The last two records show John's occupation as a sailor. On the church records, the RC parish is Lislee, Abbeymahon & Donoughmore (Barryroe)....this parish must overlap with Timoleague somehow as Barryroe was also in the name of that RC parish. Finally, attached is a death record for John Minihane, Courtmacsherry, married, sailor....look who is present at death...Margaret Dempsey! I wonder where his wife was?

I could not find a marriage or death record for Eliza (Elizabeth), so if she remained a spinster, it might be difficult to find more information about her. OR she could have emigrated somewhere....
Attached are the death records for Margaret Dempsey and Daniel Dempsey - his death was in the workhouse...by that time, it probably functioned as a hospital though.

That's fabulous Carolyn, Eliza's older sister Mary emigrated to Boston, Machachusettes, I am wondering if she followed her. Michael (Eliza's brother) is named on Margaret's death certificate so that confirms he didn't go to Boston also.
I found this clipping (attached) I presumed it was Eliza's father Daniel Dempsey but could be one of her brothers I guess?
